The Sugar Butterfly, a bakery and dessert cafe in Guwahati is founded by Mandakini Dass. Mandakini is trained at The Institute of Culinary Education in New York City where she has studied Pastry and Baking Arts and professional cake decorating and graduated at the top of her class. She has also studied and worked under celebrated cake artists such as Toba Garett, Kate Sullivan and Elisa Strauss. Mandakini is a very down to earth person. She still feels her education is ongoing as she learns new things almost every other day.
Mandakini says,”My love for baking inspired me to start my venture, The Sugar Butterfly. I wanted to bring together my artistic talents along with my skills in the kitchen to aspire to create beautiful pieces of art; in the form of cakes in particular.”
The Sugar Butterfly gives the best in baking with a gourmet twist. Fresh baked cakes, cupcakes, tarts and customised cakes are catered to customers at the bakery.
Mandakini believes in eating clean- as much as possible. Her cakes are free from artificial fats or creamers, preservatives and unnecessary chemicals. She adds, “My current geographical location in India does not have many bakeries that share my mantra of not using any preservatives and chemicals to enhance the product’s taste or texture, so naturally I saw an opportunity in the market to differentiate myself in this particular aspect.”
About her success mantra, she says “I believe that we should always know where our strengths lie and our weaknesses.”
